How Beef Share Pricing Works
Buying in bulk means better value, but pricing depends on how beef is measured:
- Live Weight: 1,000–1,200 lbs for Holsteins; 530+ lbs for Dexters
- Hanging Weight: After dressing (hide, head, organs removed). Industry standard for bulk beef pricing.
- Packaged Weight: Final freezer-ready cuts. Always less than hanging weight.

We offer ten monthly payments, plus a final settle-up after butchering:

How to Order
- Choose Your Share – Pick your share size and contact us via the
Contact Us form
or email us at thegillisfarm@gmail.com with your full name,
address, phone, and email address. We will confirm availability and enroll you in the program while your steer is raised, providing updates and monthly payment receipts. - Customize Your Cuts – Before harvest, we’ll email you to select your cuts, steak thickness, roast sizes, and packaging.
(Note: Quarter shares do not offer the same level of customization in cut thickness as half shares.) - Final Pricing & Payment – Once the butcher provides the hanging weight, we calculate your total.
Full payment is required before pick-up or delivery. - Pick Up or Delivery – Convenient options within Cape Breton.
- Fill Your Freezer – Enjoy your local, high-quality beef all year long.
Pork Shares
- Half Pig: 70–83 lbs at $6.50/lb (organs/bones not included)
- Whole Pig: 145–180 lbs at $6.50/lb (organs/bones not included)
